Considerando a predominância do uso de tanques de resfriamento coletivos no armazenamento do leite cru em Rondônia e a grande diversidade de microrganismos deletérios ao leite, o objetivo do trabalho foi avaliar a microbiota deteriorante do leite armazenado em 23 tanques coletivos da microrregião de Ji-Paraná e Cacoal. The objective of the present work was to evaluate the physical-chemical characteristics (density, pH, acidity, fat, protein, lactose and total of solids contents) and milk fatty acids composition (C: 4 to C: 20) in response to roughage sources (alfalfa hay T1; oat hay T2 and maize silage T3). The objective of this work was to evaluate the effect of somatic cell counts (SCC) in casein fractions of ultra high temperature (UHT) milk. Raw milks were categorized in SCC groups of low (200,000-320,000 cells mL-1), intermediate (380,000-560,000 cells mL-1) and high cells (600,000-800,000 cells mL-1). Five replicates of UHT milks within each SCC category were analyzed for casein fractions after 8, 30, 60, 90 and 120 days of storage through high performance liquid chromatography. SCC showed effect only on beta-casein reduction. SCC in raw milk increases the proteolysis of UHT milk, as a consequence of beta-casein degradation. |

This study aimed to evaluate the effect of corn silage (CS) replacement by cassava's foliage silage (CFS) on the production and quality of milk. Twelve lactating dairy cows were used in a randomized block experimental design with four treatments and three repetitions per block. CS was replaced by CFS at the levels of 0, 20, 40, and 60%. The replacement of CS by different levels of CFS had very low effect on the variables studied. Milk density decreased when the replacement level was increased. Fatty acids 4:0 and 6:0 presented a quadratic behavior, while fat acids 8:0, 10:0, and 15:0 presented a linear behavior as their concentrations fell when CFS diet content was increased. K-casein gene polymorphisms are of major importance in the dairy industry due to their association with different quality and productive traits (i.e., milk protein). Several methods for genotyping this gene have been proposed; however, none are focused on the simultaneous discrimination of nine K-casein variants. The effects of inactive dry yeast (Saccharomyces cerevisiae) from sugar cane were studied in 18 primiparus Saanen dairy goats (51.07±1.43) on dry matter intake and digestibility, milk production and quality. Animals were distributed in a completely randomized design during 90 days (from day 60 of milking). Diets were composed of soybean meal; soybean meal + dry yeast; or dry yeast, as protein sources, and ground corn, mineral supplement and corn silage (40%). The objective of this work was to characterize milk production from the Central Mineira and Oeste Mesoregions regions in Minas Gerais State, Brazil, according to quality parameters such as somatic cell count, total bacteria count, and composition for specific production ranges. Average results for milk fat, protein, total and nonfat solids were compliant with Brazilian legal requirements (IN-62/2011) in all the production ranges selected. The majority of sheep milk produced in the world is transformed into cheese. Feeding is a major factor affecting the quality of sheep milk and, therefore, of sheep cheese.
